Remove Deliverable Source

Soft-delete a source: flips ingest_status to "removed".

The list-by-quote / list-by-project queries already filter .neq("ingest_status", "removed"), so flipping this field is enough to take the source out of the file manager UI without blowing away the row (which other artifacts may reference).

Phase 4d (hybrid-file-manager-pipeline, 2026-04-28): added so the quote sidebar's bulk Delete action has a real backend to call. Other quote/project FM consumers can use the same endpoint.
