Aps Convert Start

POST /api/v1/aps/convert/start – kick off APS conversion without waiting.

Returns a fast response with: { success, urn, format, cached, status: "ready" | "inprogress", metadata }

For large files behind Cloudflare, the frontend should call this endpoint once, then poll /aps/convert/status until status == "success".
