Override Taste Profile

Let user manually adjust their taste profile weights.

Chapter C3 (May 2026 — Cross-Cutting): migrated from services.preference_engine (no longer exists) to services.user_memory. Critical signature change: save_taste_overrides takes ONLY the manual_overrides sub-dict — the learned category_scores column is owned by record_signal() and must NOT be overwritten from user input. Previously this endpoint threw 500 on every call because the import target was a phantom module.
