Set a company field's display-name override

Per-deployment override of a column's DISPLAY label in the company grain (#191). Presentation only - never touches the field key, the compiler whitelist, filters, sort, or ingest. Unknown keys are accepted (stored inert). Reflected on the next GET /observe/companies/fields. Use DELETE to reset to the computed name.
