Fetch the logged-in consumer's profile

Returns the profile fields for the consumer identified by the session cookie. Joins juju.email + juju.phone for display fields. Omits sensitive fields (password_hash, MFA secrets). user_id comes from the session, NOT the URL, so a consumer can never read another consumer's profile via this endpoint.
