Submit Kyc

Capture LIGHT-tier KYC fields and bump kyc_level to light.

Idempotent — a second submit overwrites the on-file fields and refreshes kyc_verified_at. We do NOT downgrade kyc_level if the embedder is already at full (ratchet only goes up); the LIGHT fields are still overwritten so the embedder can correct typos at any tier.

Returns the new on-file state so the FE can re-render without a second GET.
