Defaults to the trailing 7 days -- long enough to show a real packing-pace and box-timing picture, short enough that the gap query stays cheap. Both ends are UTC instants; a caller (the web page, or Rooster's own read later) that wants the floor's own calendar day resolves it before calling, same as fulfillment.routes.get_analytics already does for its own day/start/end params.
