Acknowledge Fulfillment

Sets the caller's own read-receipt: type=seen (default) stamps sender_seen_at or receiver_seen_at depending on which party the caller is; type=paid stamps receiver_paid_ack_at and is receiver-only. A caller who is not a party to the fulfillment (or requests type=paid as the sender) gets 404, not 403. Idempotent set/clear, not a toggle.
