Accountants

Set a customer's stored business model and/or its additional-metrics list (accountant only)

Two independent halves (#1967). model pins the stored businessModel as an accountant override (businessModelOverride = model, businessModelSource = override); it is never null — a stored model is required and only an accountant's pick can replace a derivation. additionalMetrics replaces the customer's per-company metric-pack list and touches nothing else (a pack tick never changes the model, its override or its source). At least one of the two keys is required. Accountant-only; requires requireAccountantAccessToCompany guard.
