Mute Guests

Mute every guest's microphone (Google Meet semantics).

Server-side MutePublishedTrack on each guest audio track — guests keep canPublish and may unmute themselves. Same trust boundary as /end: any workspace member. Per-track failures are counted, not fatal; an unavailable participant list is a loud 502 (never a silent success).
