Operator smoke test: dry-run a Stripe test-mode Customer+Subscription+Cancel.

Bearer-authed. Uses Stripe test-mode (requires sk_test_... key). Creates + cancels a throwaway subscription so the operator can verify the STRIPE_PRICE_ID_WATCH_MONTHLY env var is correct + the Customer/Subscription API is reachable from production.
