Get Gex Profile

Latest spot-shift dealer dollar-gamma curve for symbol.

Returns the curve persisted by the Analytics Engine on the most recent cycle: an ascending [(price, gex), ...] series whose zero crossing is gamma_flip and whose value at spot_price is net_gex_at_spot. Designed for the GEX-Profile overlay on the per-strike chart; the same dataset that drives the headline flip / net-at-spot figures already in /api/gex/summary.

delay_minutes serves the newest curve at least that old instead (see src/api/delayed_read.py).
