Update Plan

Save user-edited plan with optimistic concurrency.

PlanUpdateRequest's model_validator(mode='before') calls sanitize_incoming_plan_payload first, so legacy entry types from stale frontend caches (journey_ref / stay_ref / dangling date_source_id) are quietly stripped before Pydantic validates the inner PlanContent.
