Convert an accepted quote into a separate invoice record

Also exposed as the convert_quote_to_invoice tool on the MCP server at /mcp. The resulting invoice has no hosted page/PDF yet — use document_type: "invoice" on POST /v1/quotes instead when a shareable/payable link is needed.
