Refresh Token

Issue a new JWT token for an authenticated user.

Works for all authentication methods (username/password, Google OAuth, etc.) Frontend should call this endpoint before the current token expires to get a fresh token without requiring the user to re-authenticate.

Requires: Valid Bearer token in Authorization header Returns: New access token
