Create Checkout

Create a Stripe Checkout Session for the Creator plan. plan_type picks an entry from stripe_service.PRICING_CATALOG — currently "month" ($29/mo recurring), "year" ($149/yr recurring, founding deal), or "lifetime" ($249 one-time, founding deal, permanent access). Returns the hosted Stripe checkout URL to redirect the user to.
