Update ticket (admin)

Update ticket status, priority, internal priority, assignment, or category.

assigned_to and internal_priority accept an explicit null to CLEAR the field (unassign / revert to the user's priority) — absent means "don't touch" (discriminated via Pydantic v2 model_fields_set).
