Adjust the party size

Increases are validated against the day-level capacity cap (date override → recurring default → floor), per-slot cover pacing, and physical table fit — each excluding the booking's own current covers/table, so only the net-new covers count. force: true bypasses these guards and writes a FORCE_OVERBOOK_CAPACITY staff-override audit row (same semantics as POST /bookings' force_overbook).
