Set or clear the Contacted flag

First-class replacement for the '✅ CONTACTÉ' internal-note workaround. contacted:true stamps contacted_at + contacted_by (+ optional channel); contacted:false clears all three. Idempotent — re-marking an already-contacted booking changes nothing and returns the current state. Real transitions are written to the tamper-evident audit log. An optional note also appends a BookingNote.
