Set le custom pipeline d'une offre (overwrite).

Body : `{stages: [{"name": "Tél", "order": 1, "kind": "phone"}, ...]}`.

Si `custom_stages_json` était NULL → l'offre passait par les stages
globaux template org. Maintenant elle a son pipeline propre.

Validation au service : 1..10 stages, names uniques, kinds ∈
{phone, video, onsite, test, review}.

Permissions requises : recrutement:write

put/api/v1/recrutement/job-postings/{posting_id}/pipeline
