Create Guest Session

Create a new guest organization and session.

This allows self-service flows (hospice, MSA) to work without requiring full user registration. The guest can later claim their org by registering with the same email.

Every call creates a new guest org: the email is unverified, so it is never used to look up (and hand out) an existing guest's org.

Returns a session token that can be used for authenticated API calls.
