Upload a document — enqueues extraction pipeline as a background task (persistent mode) or runs synchronously (in-memory mode).
Persistent mode returns 202 Accepted with a task_id. In-memory mode returns 200 with synchronous extraction results.
If document_type is not provided, PDF documents will be auto-classified.
