Create Checkout Session

Creates a real Paddle transaction via the REST API and returns its hosted checkout.url -- same "create server-side, redirect the browser" shape as api/webhooks_stripe.py's endpoint of the same name, so pricing.html's frontend code can treat both providers identically.
