Get Crow Token With User Info

Generate a Crow identity JWT with user info from request body.

Use this endpoint when you want to pass user info explicitly (since Clerk JWT may not contain email/name by default).

The frontend can pass the user info from Clerk's useUser() hook.

Uses verification_secret from .env to sign the JWT.
