Handle Retell AI custom function calls.

Authenticates and configures via query params: ?api_key=mvn_test_xxx&project=my-store&mode=charge&gateway=stripe

Retell sends a POST with: {name, args, call: {call_id, from_number, metadata}}

Every POST is a function call — no event type branching needed.
