Create a hosted-checkout session (Paddle by default; configurable)

Provider is chosen by BILLING_PROVIDER_MODE: 'paddle' (default, all customers cleared through Paddle as Merchant of Record), 'razorpay' (force Razorpay for all), or 'country' (route IN -> Razorpay, else -> Paddle). plan_id='enterprise' returns a mailto: contact-sales URL.
