Add Project Endpoint
Creates a new project and associates it with an event organizer.
Request Body: eventOrganizerId (str): The ID of the event organizer (required) title (str): The title of the project (required) startDate (str): The start date in ISO format (required) endDate (str): The end date in ISO format (required)
Returns: JSON response with: - message: Success message - project: Created project details
Errors: - 400 if any required parameter is missing or dates are invalid - 404 if event organizer is not found - 500 if database access fails
