Mint a new live API key

Required scope: keys:write. Requested scopes must be a subset of the calling key's own scopes (403 scope_escalation otherwise). The plaintext key is returned ONCE — store it immediately.

API version pin (ISO date). Absent → latest. Unknown or future → 400 unsupported_version. The X-Amouen-Version header name is still accepted as a deprecated alias; when both are present, X-Nashboard-Version takes precedence.
