Latest order book (Depth of Market).

Hyperliquid reads ClickHouse order_book_snapshots only (live L2 warehouse). Postgres raw_order_books_v2 is frozen legacy and is used only for non-HL venues when present. Do not fall back to PG for HL — that book tip is stuck at cutover.

Returns {symbol, venue, venues_included, ts, bids [[price, size], ...], asks, mid_price}. Use GET for poll or WebSocket /chart/ws/dom for live (tier≥1).
