Update the global Anthropic Proxy backend setting

Sets the global endpointConfigId used as the fallback when a token has no per-token binding and no model: "toolpiper:tp-<id>" prefix is present. Pass null to clear (proxy will then 503 for unbound tokens until a binding is set).
