Start the pose stream WebSocket server

Starts the dedicated WebSocket server for real-time pose streaming. The server prefers port 10005 but falls back to an OS-assigned port if 10005 is occupied. The response includes the actual port and endpoint URL.

Idempotent — calling start when already running returns the current port.
