Create a Plaid Link token

Issues a Plaid Link token and a server-side attempt id. Use update mode for the same institution login when repairing it or adding another account.

First transaction date to import for a new connection, no more than two years before today. Required by LedgerHQ user interfaces in connect mode and ignored in update mode.
