Infer one skill variable from a record

Work out what one skill variable should be for a given record.

The single-variable version of what a skill does to its whole input before it runs - useful for showing a caller what a skill WILL see without running it. Results are cached per (org, entity_id), so passing entity_id makes a repeated call cheap.
