friday follows the same key-presence rule as BusinessHoursScheduleOverride: present (including explicit None) overrides Friday; absent falls back to weekdays. Unset friday is omitted from dumps so saving the existing Mon–Fri editor cannot close Friday. Minute-precise Head Office hours (e.g. 14:30) live on the destination override, which uses BusinessHoursWindow; this model stays whole-hour.
