Populate Grid

Rebuild reference grid cells from price_observations.

Query params: species: optional. When set, only this species is rebuilt. When omitted, every species with a rubric on disk is rebuilt.

Returns per-species result rows. The job runs synchronously (single-species is seconds; all-species is typically under a minute for the current observation volume).
