Update organization configuration

Accepts only the configuration allowlist: logo, ticketPrefix and, under settings, timezone, allowedDomains, maxChatSessions, retentionDays, enableAnalytics, aiModels.model, supportBusinessHours, slaPolicy, emailToTicket, piiRedaction and channelTicketing. Any other field is rejected rather than ignored.

emailToTicket.signingSecret is not writable here and reads back as a boolean, so round-tripping the object cannot blank it.
