List distinct connector categories

Every category value used across the catalog this organization can see — the platform catalog plus its own custom connectors — from a full scan, not just whatever page GET /connector happens to have returned so far. Use this to populate a category filter; use GET /connector?category= to apply one. Briefly cached server-side, so a category added or removed by a custom-connector edit can take a short while to show up here. Requires connector:view.
