Complete Onboarding

Mark the caller's first-run onboarding walkthrough as complete.

Idempotent: the first call stamps onboarded_at; later calls leave the original timestamp untouched. The mobile client shows the walkthrough while this is NULL, so stamping it stops the auto-show on future sign-ins.
