Unsubscribe from the waitlist via emailed link.

Mark a signup as unsubscribed (confirmed=False, token cleared).

The email link carries a plaintext token. This endpoint hashes it (SHA-256) and looks up the stored hash — ADR-019 compliant (plaintext never in DB).
