Replace the linked LegalEntity (PII) for an account holder

Updates the AccountHolder-owned LegalEntity using PUT semantics (full replacement of PII). The AH-LE link itself is immutable post-create; this endpoint replaces the linked LE's identity fields, nested addresses, phone numbers, and identifications.
