Resend Inbound

Receive an inbound email from Resend, match it to a venue_enquiry_request by tracking_token, parse it via Claude, and write the response row + booking_option row.

Returns 503 dormant if RESEND_INBOUND_SECRET is unset. Returns 401 if signature verification fails. Returns 200 with {ok: true, ...} on a processed reply. Returns 200 with {ok: true, status: "ignored", reason: "..."} when the payload is not an email reply we can match — this prevents Resend from retrying the webhook indefinitely.
