Upsert Guest Profile

Persist a soft-onboarded guest profile keyed by visitor_id.

Called:

  1. When GuestOnboardingDrawer completes (full profile).
  2. On app mount if a guest profile already exists in localStorage (session ping — updates last_seen_at and session_count). No auth required — visitor_id is the only identifier.
