`POST /v1/ingest/email`

## Request

Extract structured data from a forwarded email (.eml) with attachments.

Parses MIME email, extracts all supported attachments (PDF, text, FHIR, CCDA, HL7v2, X12),
and runs extraction on each. Email body text is preserved as context.

## Query parameters

- `claim_type` 'wc' | 'ssdi' | 'ssi' | 'va' | 'pi' | 'ltd' | 'std' | 'feca' | 'sdi' | 'medicare' | 'medicaid' | 'hospice' | 'lnc': Insurance/benefits claim types the platform supports.
