Download candidate profile as PDF.

L5: writes a document_access_log row keyed by a freshly-generated
track_id that's also printed as the PDF watermark.

- `blind` boolean: Hide candidate name and company
- `project_candidate_id` string, nullable: Project candidate ID for context
- `project_id` string, nullable: Optional project ID for audit log scoping
- `client_company_id` string, nullable: Optional client company ID for audit attribution
