Mint a short-lived JWT for a direct MCP integration.

Customers POST here with their pozeidon API key to get a token they
can attach as `Authorization: Bearer <token>` when calling the MCP
server directly (e.g. https://analyze.pozeidon.bubbleye.ai/mcp).

Body: {"mcp": "analyze", "ttl_minutes": 30}  — ttl_minutes optional,
defaults to 30, capped at 60.
Returns: {"token": "<jwt>", "expires_at": "<iso8601>", "mcp": "analyze"}
