Upsert the Lead Docket configuration for this customer.

  - `intake_complete_email_enabled` boolean, nullable: Email the intake inbox when an AI follow-up meets the configured completion profile for a Chase lead; does not change its status
  - `intake_complete_email_recipients` string[], nullable: Intake inbox recipients; an empty list uses the configured text reply recipients
