Latest order book (Depth of Market).

Hyperliquid reads ClickHouse `order_book_snapshots` only (live L2 warehouse).
Postgres `raw_order_books_v2` is frozen legacy and is used only for non-HL venues
when present. Do not fall back to PG for HL — that book tip is stuck at cutover.

Returns {symbol, venue, venues_included, ts, bids [[price, size], ...], asks, mid_price}.
Use GET for poll or WebSocket /chart/ws/dom for live (tier≥1).

## Query parameters

- `symbol` string, required: Asset symbol
- `venue` string, nullable: Exchange. Omit to use Hyperliquid when that coin is listed there. Use 'all' for a merged book across hyperliquid, binance, bybit (sizes summed per price level).
