Use this call to create new category

## Request body

- InventoryCreateCategoryRequest
  - `categoryName` string — Category name
  - `categoryId` string, uuid — Category id (optional)

- LinnworksCategory
  - `CategoryId` string, uuid — Category ID
  - `CategoryName` string — Category name
  - `StructureCategoryId` integer — Structure Category Id to which this product category is assigned to, nullable if not available
  - `ProductCategoryId` integer
