Update an organization consumer mapping

## Path parameters

- `consumer_charity_mapping` integer, required

## Request body

- object
  - `consumer_charity_id` integer: Consumer charity ID
  - `ein` string: EIN (9 digits, with or without dash)
  - `organization_id` integer: Organization ID

## Response `200`

Mapping updated successfully

- OrganizationConsumerMapping
  - `id` integer: Primary identifier of record
  - `organization_id` integer, nullable: Internal organization ID (null if unmatched)
  - `consumer_charity_id` integer: External consumer charity ID
  - `ein` string: EIN without dashes (9 digits)
  - `is_primary` boolean: Whether this is the primary organization for this consumer charity ID
  - `is_matched` boolean: Whether this mapping is matched to an organization (true if organization_id is not null)
  - `created_at` string, date-time: Date/time of record creation
  - `updated_at` string, date-time: Date/time of record last update

## Other responses

- `400`: Validation error
- `404`: Mapping not found
