Rebuilds the conformal calibration set (sampling normal optical readings from the last `lookback_minutes`). Calibration is otherwise auto-cached for 1h, or invalidated earlier when the online exchangeability test fires. The response carries the post-rebuild `shift` status (window reset, `last_reset_reason` = recalibrated).
